How to prepare MIXED VEGETABLE KORMA

VEGETABLE KURMA/NAVARATAN CURRY is very famous delicious and healthy curry. This curry is festival special curry, it has all vegetables in it and also all nutritional values in it. Kids love this delicious curry.

Ingredients needed:
(1 cup = 100grams)
  • → Aloo - 1/4 cup
  • → Fresh cream - 3 teaspoons 
  • → Cauliflower - 1/4 cup
  • → Beans - 1/4 cup
  • → Green peas - 1/4 cup
  • → Carrot - 1/4 cup
  • → Cardamom - 2 numbers
  • → Fried onions - 1 cup
  • → Tomato puree - 1/4 cup
  • → Cashew nuts - 1/4 cup
  • → Almonds - 1/4 cup
  • → Melon seeds - 1/4 cup
  • → Poppy seeds - 1/4 cup
  • → Cinnamon - 2 numbers
  • → Cardamom - 3 numbers 
  • → Cloves - 3 numbers 
  • → Red chili powder - 4 teaspoons or 
  •      Green chilies - 5-6 numbers
  • → Garam masala (optional) - 1 teaspoon 
  • → Ginger & garlic paste - 2 teaspoons 
  • → Mustard seeds - 1 teaspoon 
  • → Cumin seeds - 1 teaspoon 
  • → Coriander leaves - 1 bunch
  • → Curry leaves - 1 bunch
  • → Oil - 3 teaspoons 
  • → Salt to taste 
  • → Water

Preparation:

For Gravy:
   1. Boil almonds, melon seeds, cashew nuts, poppy seeds, for 15-20mins, then add into blending jar, add onions, cardamom, cloves, cinnamon into it and blend into nice smooth paste.
   2. The kurma gravy is ready.
For curry:
   3. Boil the vegetables.
   4. Heat the oil in a pan then add mustard seeds, cumin seeds, curry leaves, ginger & garlic paste, tomato puree, cook for 5 mins, then add kurma paste and cook until the oil oozes out.
   5. When the oil comes out, add red chili powder, salt, garam masala, fresh cream, add boiled vegetables and cook for 10mins.
   6. Garnish with coriander leaves and serve.
   7. Finally the delicious curry is ready to serve. You can enjoy this with roti, naan and rice.

Tip of the day: For making curry more delicious add coconut powder, milk into gravy. You can add any vegetables into it to make more nutritious. You can use the kurma gravy for 1 week by storing in refrigerator and add different vegetables and make different curry.
