MALAI KOFTA CURRY is a creamy curry with the awesome gravy. This is commonly found in restaurants and its there special recipe. Malai means cream and kofta is a ball with different combination of vegetables. This is the basic kofta they make in restaurants, so make this in your home and impress your family members.
Ingredients needed:
(1 cup = 100grams)
- → Carrot - 1 cup
- → Bottle gourd - 1 cup
- → Fresh cream - 1/2 cup
- → Besan (chickpea flour) - 1/2 cup
- → Coriander powder - 2 teaspoons
- → Onions - 3 numbers
- → Red chili powder - 4 teaspoons
- → Ginger & garlic paste - 2 teaspoons
- → Mustard seeds - 1 teaspoon
- → Cumin seeds - 1 teaspoon
- → Cashew nuts - 1/2 cup
- → Poppy seeds - 4 teaspoons
- → Coconut - 1/4 cup
- → Cloves (optional) - 2 numbers
- → Coriander leaves - 1 bunch
- → Curry leaves - 1 bunch
- → Salt to taste
- → Oil
Preparation:
1. Finely grate carrot, bottle gourd, remove water from it, then add fresh cream, red chili powder, ginger & garlic paste, coriander powder, salt, besan, make into lemon size balls.
2. Heat the oil for deep fry then fry the balls on a slow flame, until they get golden color and drop them in a tissue to remove the excess oil from it.
3. Take the blending jar then add cashew nuts, poppy seeds, coconut, cloves blend them into nice smooth paste.
4. Finely grate the onions.
5. Heat the oil in a pan then add mustard seeds, cumin seeds, ginger & garlic paste, curry leaves, grated onions cook until the onions turn into golden color, then add the cashew paste (add water if needed), cook for 5 mins then add coriander powder, red chili powder, salt after the oil oozes out, add the kofta's into the gravy put the lid and cook for 4-5 mins.
6. Garnish it with cashew, coriander leaves, fresh cream and serve.
7. Finally the yummy creamy delicious malai kofta curry is ready to serve. You can enjoy this with naan, roti, and even with rice.

Tip of the day: Make the thick such that it taste very yummy, you can add your favorite vegetables in making kofta balls. If you want crispy kofta's then add 3-4 teaspoons of rice flour into it. Before adding kofta's to gravy add little water (by adding water, cooking the kofta's in that gravy makes the kofta's soft), Kofta's observes all the gravy and become so yummy.
