DHOKLA a very famous, delicious dish which kids love very much. This dish is originated from Gujarat cuisine. It's just look like a spongy juicy cake and taste is very yummy. It can be eaten as breakfast, as a side dish and even as a snack. It's very healthy and made without using any oil.
Ingredients needed:
(1 cup = 200grams)
- → Rice - 1 cup
- → chickpeas (chana dal) - 1 cup
- → Urad dal (split white dal) - 1 1/2 cup
- → Baking soda/eno - 2 teaspoons
- → Grated carrot (optinal) - 1/4 cup
- → Cashew nuts (optional) - 4-5 numbers
- → Lemon juice (optional) - 2 teaspoons
- → Oil/ghee - 2 teaspoons
- → Mustard seeds - 1 teaspoon
- → Cumin seeds - 1 teaspoon
- → Curry leaves - 1 bunch
- → Garlic - 2-3 cloves
- → Turmeric (optional) - 1 teaspoon
- → Green chilies - 5-6 numbers or
- red chilli powder - 1 teaspoon
- → Water - 5-6 cups
- → Salt to taste
Preparation:
1. Take a bowl add chickpeas (chana dal), urad dal (split white gram), rice, and soak it 3 hours.
2. Blend the dals into nice smooth paste while blending add pinch of salt for taste and transfer into bowl.
3. Add baking soda, turmeric then mix well and put aside for 6-8 hours or overnight for fermentation.
4. After fermentation take the batter mix once again (if the batter doesn't ferment add Eno and keep aside for 15mins) then take cake mould or any square or round shaped bowls, pour the batter into bowl upto 2inches of height.
5. Pour the 2-3 cups of water in a rice cooker, place the bowl in the water and cook it for 15-20 mins put the tooth pick or fork in the middle and if it comes clean then it's done.
6. Heat oil in a pan add mustard seeds, cumin seeds, garlic, green chilies, curry leaves, small pieces of cashew nuts (optional), coriander leaves, pour it on to the cooked dhokla and also if u like add some lemon juice or any flavoured water.
7. Cut into cubes or any shape and serve it with curd or any green, spicy chutney.
8. Finally yummy delicious tasty juicy spongy cake is ready.

Tip of the day: Before pouring the batter into bowl apply oil/ghee to it so that the dhokla's don't stick to the bowl. You can add green chilies or red chilli powder to it. If you add red chilli powder you have to sprinkle after it has been cooked, if your adding green chilies you can add it into the oil.
