How to make PULIHORA (Tamarind rice, Puliogare)

PULIHORA(Tamarind Rice) is made using tamarind and some spices which is commonly made in Telangana and Andhra Pradesh. In some places it is also called PULIOGARE or PULIYODARIA. This recipe is made at the time of festival for God and also disturbed in the temples as Gods prasadam

Ingredients needed:
(1 cup = 200grams)
  • → Tamarind - 1/2 cup 
  • → Coriander leaves (cilantro)-1 Bunch
  • → Curry leaves - 1 Bunch
  • → Turmeric powder - 1 teaspoon 
  • → Green chilli - 7-8 numbers
  • → Red chilli - 5-6 numbers 
  • → Mustard seeds - 1 teaspoon 
  • → Urad dal (split white gram)  - 1 teaspoon 
  • → Channa dal (split chickpea) - 2 teaspoons
  • → Peanuts - 1 teaspoon 
  • → cashew nuts - 1 teaspoon
  • → Sesame seeds - 5 teaspoons
  • → Rice - 2 cups
  • → salt - according to taste
  • → water - 4 cups
  • → Oil

Preparation:

   1. Soak tamarind in a hot water for 20mins, squeeze the juice, add some water to it and put it on the stove until a thick consistency appears (approximately it can take 15mins).
   2. Soak rice for 15mins 
   3. Heat oil/Ghee in pan then add mustard seeds after they splutter add turmeric, curry leaves, red chilli, green chilli, peanuts, cashew nuts, urad dal cook until golden color appears, finally add salt, switch off the flame, put the mixture aside and let it cool down.
   3. Cook the rice while cooking add oil/Ghee for a better taste (By adding oil while cooking can make rice shiny and tasty)
   4. After rice is cooked transfer into a bowl and let it cool down.
   5. Dry roast sesame seeds in a pan and make into powder.
   6. Add the sesame seeds powder, mixture to rice, mix well such that oil is mixed well with the rice and finally add tamarind juice to it.
    7. Put a lid and keep aside for 30mins such that the Tamarind juice taste spreads to the rice and makes the recipe yummy.
    8. Finally serve coriander leaves on the top and your PULIHORA (tamarind rice) is ready to eat and it can served with curd, ghee and pickle.
