How to prepare LAUKI (BOTTLE GOURD) PARATHA

LAUKI (BOTTLE GOURD) PARATHA is from Indian cuisine. It is also called as Sorakaya and Anapakaya. This recipe is made very quickly with very simple ingredients. Many varieties can be made with bottle gourd like sweets, snacks, chips and many more. This is very lite, healthy and tasty breakfast.

Ingredients needed:
(1 cup = 200grams)
  • → Bottle gourd  - 1/2 cup
  • → Wheat flour - 1 cup
  • → Curd - 1/2 cup
  • → Red chilli powder - 2 teaspoons or 
  •      Green chilies - 5-6 numbers
  • → Curry leaves (optional) - 1 bunch
  • → Coriander leaves (optional) - 1 bunch
  • → Coriander powder - 1 teaspoon 
  • → Besan (chickpea flour) - 3 teaspoons
  • → Carrom seeds - 1 teaspoon 
  • → Ginger & garlic paste - 1 teaspoon 
  • → Ajwain seeds  - 1 teaspoon 
  • → Garam masala powder - 1 teaspoon 
  • → Oil/ghee/butter - 2 teaspoons
  • → Salt to taste
  • → Water

Preparation:

There are two ways of making it. You can stuff the lauki mixture in roti or you can mix with lauki and make it into dough.
   1. Take a bowl add wheat flour, oil (optional), salt, water, mix the ingredients, make it into soft dough, apply oil and keep aside for 15-20mins.
   2. Thinly grate the bottle gourd, transfer into bowl (remove water from it) then add green chilies/red chili powder, carrom seeds, ajwain seeds, coriander powder, garam masala powder, curd, besan, salt, mix well and make into dough. (OR)
   3. You can add wheat flour into it and make it into hard dough if your resting it for 20mins it becomes soft. 
   4. Take roti dough, make into poori size, stuff the mixture in it, seal it and roll it (OR) take the lauki roti mixed dough and roll it and cook it both sides on a slow flame by applying oil/butter.
   5. Finally the tasty delicious LAUKI PARATHA is ready to serve with curd, pickle.

Tip of the day: There are two ways the better and easiest way is mixing the wheat flour in the lauki mixture this way the taste is very yummy, sometimes kids separate the mixture if you stuff so when you mix with wheat flour they cannot separate, they get all the nutrients and vitamins.
