How to prepare SOOJI CRACKERS/RAVA APPALU

RAVA APPALU/SOOJI CRACKERS is a festival special easy recipe with very simple ingredients. Generally appalu is a hot in Telangana, but this is different this is sweet recipe generally made in Andhra Pradesh during dussera, Ganesh chathurthi even for other festivals. Make this special recipe and enjoy the different taste of this crackers.

Ingredients needed:
(1 cup = 200grams)
  • → Sooji/semolina/rava - 2 cups
  • → Milk - 1/2 cups
  • → Almond flakes - 1 cup
  • → Cashew nuts - 15 numbers
  • → Raisins - 10 numbers
  • → Ghee - 5-6 teaspoons 
  • → Cardamom powder - 2 teaspoons 
  • → Sugar - 1/4 cup
  • → Water - 2 cups
  • → Oil for deep frying

Preparation:

   1. Heat the ghee in pan then roast cashew nuts, almond flakes, raisins, other dry fruits of your choice cook them until they turn into golden color then transfer into plate.
   2. In the same pan pour water, milk, let it come to a boil then add sooji slowly into it mix well such that there should be no lumps, cook it on a medium flame until the sooji observes the water then switch off the flame put the lid on it and leave it for 5 mins.
   3. Keeping the lid on sooji helps in observing all the water and also helps the sooji to cook.
   4. Remove the lid add sugar, cardamom powder (don't switch on the flame), mix once when the sugar starts melting switch on the cook it on a low flame, keep mixing until all the sugar melts completely then add dry fruits into it.
   5. Heat the oil for deep frying.
   6. Take a small portion of ball then press slightly without cracking the edges on hands or on a plastic cover then fry them one by one until they turn into golden colour on a medium flame, put them in a tissue paper such that if any excess oil is present it observes it.
   7. Garnish it with dry fruits and serve it to your family members enjoy the delicious recipe.
   8. Finally the delicious dessert is ready to enjoy.

Tip of the day: For a quick version you can add hot water,milk into sooji then mix well then add sugar powder into it and make into dough and make the balls fry them. While cooking sooji in the hot water add little by little ghee into it this makes the taste so yummy, avoids sticking and cooked faster.
