FRUIT KESARI/MIXED FRUIT SHEERA is a famous dessert in South India, this is usually made for festivals and offered to God. This delicious dessert is made with different fruits mixed with sooji pudding. It is made in few minutes with very simple ingredients like seasonal fruits except citrus fruits, melon and sooji.
Ingredients needed:
(1 cup = 200grams)
- → Sooji/rava/semolina - 1 cup
- → Pineapple - 1/4 cup
- → Sweet mango - 1/4 cup
- → Apple - 1/4 cup
- → Banana (optional) - 1 number
- → Pomegranate - 1/4 cup
- → Almond flakes - 1/4 cup
- → Cashew nuts - 15 numbers
- → Raisins - 10 numbers
- → Ghee - 5-6 teaspoons
- → Cardamom powder - 2 teaspoons
- → Sugar - 1/4 cup
- → Saffron - 1 teaspoon
- → Food color (optional) - 2 drops
- → Water - 2-3 cups
Preparation:
1. Heat the ghee in a pan then roast the sooji slightly until they turn into light gold color or for 2-3 mins on a low flame then transfer it into plate and let it cool down.
2. Add 2-3 teaspoons of ghee in the same pan then add all dry fruits, cook them until they become golden color and remove them into plate.
3. In the same add 2 teaspoons of ghee then add fruits, cook them for 5-10 mins or until they become slightly transparent then add sugar, water, cook them on a medium flame for 5-10 mins then add cardamom powder, saffron or food color, sooji, mix well such that there should be no lumps in it, also adjust the water according to the consistency, cook it till the water is absorbed completely.
4. Garnish it with roasted dry fruits and serve hot, cold or at room temperature.
5. Finally the delicious delight is ready to enjoy. In this festive season prepare this sweet, offer to goddess Durga and get her blessings.

Tip of the day: Instead of adding water you can also add milk and cook the fruits and sooji. When the sooji is cooked add ghee on the top, once mix well and serve. You can add saffron directly or mix it milk and pour it into cooking mixture. When it is hot pour it into plate, when it cools down cut it into pieces, serve them and store them for 1 week in refrigerator.
