SABUDANA VADA/SAGOO VADA is a famous Maharashtrian snack recipe. Sabhudana is also called as tapioca pearls. Sagoo is generally eaten in fasting times, also festival season in different styles like sagoo khichidi, sagoo kheer and many more. This is special healthy recipe and tasty recipe which everyone can enjoy the taste.
Ingredients needed:
(1 cup = 200grams)
- → Sagoo/tapioca pearls - 2 cups
- → Potato/aloo - 1 numbers
- → Almond flakes (optional) - 10 numbers
- → Cashew nuts (optional) - 10 numbers
- → Green chillies - 7-8 numbers or
- Red chilli powder - 2-3 teaspoons
- → Peanuts - 1/4 cup
- → Onions - 1 number
- → Curry leaves - 1 bunch
- → Coriander powder - 1 bunch
- → Rice flour - 1/2 cup
- → salt to taste
- → Water as needed
- → Oil for deep frying
Preparation:
1. Soak sagoo for at least 4-5 hours.
2. Grate the potato thinly then put it in water to avoid discolouring.
3. Take a bowl then add soaked sagoo, grated potato, green chillies or red chilli powder, onions (slice into small pieces), peanuts crushed or blended, curry leaves, coriander leaves, cashew nuts, almond flakes, salt, rice flour then mix well, adjust water and make into nice soft dough or until the binding consistency is appeared.
4. Heat the oil for deep frying.
5. Take a small portion of sagoo mixture then flatten them slightly or you can do any shape using cutters then fry the vada's on a low flame until they turn into golden colour then put them on tissue paper such that it observes excess oil.
6. Serve them hot with tomato ketchup or any spicy chutney or you can enjoy them directly.
7. Finally the yummy recipe is ready to enjoy. You can serve it as a snack, side dish, even for breakfast.

Tip of the day: If you don't have time soak the Sagoo in hot water for 20 mins this makes your dish fast. If you are offering to god skip the onions. Instead of boiling potato we have used grated potato because boiled potatoes observes oil when we grate the potato avoids observing oil and you can enjoy the delicious vada's without oil. You can also add corn flour to get some soft texture outside.
