How to prepare KADDU KI KHEER

KADDU KI KHEER is a tasty sweet with low calories, if you love sweets you will surely enjoy this sweet which has lot of nutritional values and vitamins in it. This is also called as GUMMADIKAYA PAYASAM/PUMPKIN PAYASAM. Kaddu is used in festivals, puja's so don't waste the kaddu you can make this sweet and enjoy. This sweet also made in navaratri season or for any festivals and it is a quick version of making kaddu kheer.

Ingredients needed:
(1 cup = 200grams)
  • → Pumpkin/kaddu - 2 cups
  • → Sagoo or semolina - 1/4 cup
  • → Milk - 2 cups
  • → Rose water (optional) - 3-4 drops
  • → Almond flakes - 1/4 cup
  • → Cashew nuts - 15 numbers
  • → Raisins - 10 numbers
  • → Ghee - 5-6 teaspoons 
  • → Cardamom powder - 2 teaspoons 
  • → Sugar - 1/4 cup
  • → Saffron - 1 teaspoon
  • → Water - 2-3 cups

Preparation:

   1. Peel the pumpkin, cut into pieces then boil it in a pressure cooker until you get a 2-3 whistles or boil it directly with skin then scoop the pumpkin then transfer into plate.
   2. Take the blending jar then add boiled pumpkin, milk then blend it nice smooth paste.
   3. Heat the ghee in a pan then add dry fruits, fry them until they become golden color and transfer them into plate.
   4. Heat the pan then add sagoo, milk, water in the pan and cook until they become transparent or if your using semolina cook it for 2-3 mins in milk.
   5. After the sagoo/semolina is cooked add the pumpkin puree cook it for 5-10 mins or until the mixture thickness slightly or comes to boil, add rose water, sugar, saffron, cardamom powder then cook it for more 5 mins.
   6. Switch off the flame then garnish it with roasted dry fruits on the top.
   7. Finally the delicious delight kaddu ki kheer is ready to serve. You can enjoy this yummy sweet hot, cold or at room temperature.

Tip of the day: If you like pumpkin you can grate it then cook in milk with sagoo or semolina after it is cooked completely add the sugar, other ingredients into it, in this way you'll get the pumpkin pieces and you can enjoy the flavor of it. This kheer can also be used for rasamalai gravy, it tastes so yummy and even very creamy.
