TOMATO RICE is a very easy and tasty recipe. This recipe is made in different variations but I hope this is the easiest way of making tomato rice. No need of extra work or any extra ingredients in it. With daily available ingredients you can make this recipe.
Ingredients needed:
(1 cup = 200grams)
→ Tomatoes - 1 cup
→ Basmati rice or Rice - 2 cups
→ Ghee/ Oil - 3 teaspoons
→ Chana dal (optional) - 1 tablespoon
→ Cashew nuts (optional) - 10 numbers
→ Mustard seeds - 1 teaspoon
→ Cumin seeds - 1 teaspoon
→ Red chilli powder - 2 teaspoons or
Green chilli - 5-6 numbers
→ Turmeric powder - 1/2 teaspoon
→ Ginger & garlic paste - 1 teaspoon
→ Curry leaves - 1 bunch
→ Coriander leaves - 1 bunch
→ Coriander powder - 1 teaspoon
→ Garam masala - 1/2 teaspoon
→ Water - 4 1/2 cups
→ Salt to taste
PREPARATION:
1. Heat a pan add oil/ghee, mustard seeds, cumin seeds, turmeric, curry leaves, ginger & garlic paste, chana dal, cashew nuts, cook 2 mins then add tomatoes or tomatoes puree into it and also add little water and cook for 5 mins.
2. Wash your rice and soak it for 15-20 mins(optional).
3. When the tomatoes or cooked lightly then add red chilli powder, coriander powder, garam masala, salt and add rice into it then cook it for more 2mins.
4. Transfer into your rice cooker, add water into it then cook by adding coriander leaves on the top.
5. Your TOMATO RICE is ready to enjoy. Enjoy this rice with pickle, curd or directly. It tastes so yummy, so why to delay make it now and enjoy with your family and friends.

Tip of the day: If you are using tomatoes puree no need to cook for longer time it just takes 1-2 mins so if you are in a hurry you can just make tomatoes puree and add into it. Chopping of tomatoes is up to you, you can make them into big pieces or small pieces it's an optional. You can add tomatoes directly into the rice they'll cook until the rice but you need to add 1/2 cup extra water to cook the tomatoes.
